Ingredients:
Pork Loin
Glaze:
2-3 TBSP Walden Farms Apricot Spread
1/2-1 tsp Crushed Garlic
Optional:
Cayenne Pepper to taste.
Directions:
Preheat oven to 350 degrees
Microwave Apricot Spread in 15 second increments until it is thin enough to mix in garlic & cayenne if desired.
Pierce meat with a sharp knife in several places and press the Apricot Glaze into the openings. Rub the meat with the remaining Apricot Glaze mixture.
Place pork loin into oven, turning and basting with pan liquids. Cook until the pork is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read 145 degrees.
Serve with 2 cups of your choice of veggies. It’s amazing over cauliflower rice!
