Ingredients:
8oz Califlower
1/2 tbsp Olive oil
1 tbsp Minced garlic
1/3 cup Chopped onion
1 cup Chopped jicama
2 stalks Celery chopped up
6 ounces Protein of your choice
2 Eggs (I used 1/2 cup of egg beaters)
3 tbsp Soy sauce
Directions:
Mix garlic & olive oil in a large pan over medium/high heat for 2-3 minutes.
Next add in celery & water chestnuts (or any desired veggies, I chose these because they are phase 1 approved) continue cooking over medium/high for about 3-4 minutes.
Next stir in pre-scrambled eggs, cauliflower, protein, onion & soy sauce. Cook stirring frequently for 5-7 minutes.
