2 (2.6oz) Pouches of low sodium chunk light tuna in water drained
¼ cup Walden farms mayo
1 ½ tsp Fresh lemon juice
¼ tsp dijon mustard
¼ cup Chopped roasted red peppers
½ TBSP EVOO
½ TBSP IP balsamic dressing
1 ½ cups chopped romaine lettuce
1. Mix 1st 4 ingredients in a medium bowl until well combined. Fold peppers and tuna mixture.
2. Toss dressing with lettuce; toss well. Divide salad between 2 plates and top evenly with tuna salad.
Serving size: 1 cup tuna salad and 3/4 cup salad
