Spicy Soy-Glazed Salmon

5 stalks celery, very thinly sliced

1 bunch scallions, thinly sliced

4 jalapenos, seeded and thinly sliced

1 TBSP vegetable oil

Kosher salt

4 6-oz skinless salmon fillets

2 TBSP low-sodium soy sauce

Steamed bok choy for serving, optional

 

  1. Heat oven to 450˚ on large rimmed baking sheet, toss celery, scallions, jalapenos, oil and 1/8 tsp salt.
  2. Place salmon in 2-qt square baking dish and drizzle with soy sauce. Roast salmon alongside vegetables until vegetables are tender and salmon is opaque throughout, 12 to 15 minutes. Serve salmon with celery mixture and steamed bok choy.
