Cajun Blackened Tilapia

Serve with a salad of romaine lettuce, grape tomatoes, and sliced radishes (2 cups per serving) and 2 TBSP Walden Farms ranch dressing.

1 tsp black pepper

½ tsp ground red pepper

1 ½ tsp celery salt

1 TBSP paprika

1 ½ tsp garlic powder

1 ½ tsp dried thyme

8 (2- to 3- ounce) tilapia fillets

1/3 cup EVOO

Lemon wedged optional

 

  1. Combine black pepper, red pepper, celery salt, paprika, garlic powder, and thyme in a shallow bowl; mix well.
  2. Heat a large cast-iron skillet over high until hot. Brush fillets with oil; coat fillets on both sides with spice mixture.
  3. Working in batches, cook fish, turning once, until blackened on both sides and flaky inside, 3 to 4 minutes total. Serve fish immediately. Garnish with lemon wedges, if desired.
