Super Fruit Spring Salmon Salad
Ingredients
- 4-6 oz salmon
- 1 tsp olive oil
- 1 tsp + 1 tbsp Walden Farms Super Fruit Balsamic Vinaigrette
- 1-2 cups Spring Greens Mix
- 2 cups total of: cucumber, bell peppers, red onion, cherry tomatoes
Directions
- marinate 4-6oz of salmon with 1 tsp olive oil and 1 tsp Walden Farms Super Fruit Balsamic Vinaigrette
- bake or grill the salmon
- add greens and veggies to a bowl
- top with salmon, and a drizzle of the vinaigrette
Notes
This simple, easy-to-make salad is perfect for a nice warm day. Good for Phase 1 or 2. Phase 2, you can add 1 oz of feta or blue cheese, or 14 almonds.
