Super Fruit Spring Salmon Salad

  • 4-6 oz salmon
  • 1 tsp olive oil
  • 1 tsp + 1 tbsp Walden Farms Super Fruit Balsamic Vinaigrette
  • 1-2 cups Spring Greens Mix
  • 2 cups total of: cucumber, bell peppers, red onion, cherry tomatoes


  1. marinate 4-6oz of salmon with 1 tsp olive oil and 1 tsp Walden Farms Super Fruit Balsamic Vinaigrette
  2. bake or grill the salmon
  3. add greens and veggies to a bowl
  4. top with salmon, and a drizzle of the vinaigrette


This simple, easy-to-make salad is perfect for a nice warm day. Good for Phase 1 or 2. Phase 2, you can add 1 oz of feta or blue cheese, or 14 almonds.
